potato skin bites

I found these at publix and i tried and it was amazing!!!!!!


1 lb baby gold (or red) potatoes.

3 tablespoons of chives, divided (optional)

4 oz sharp cheddar cheese

2 tablespoon olive oil

1/2 teaspoon kosher salt

1/4 cup sour cream

1/4 cup spreadable cream cheese

1/2 teaspoon pepper, divided

1/4 cups cooked bacon bits.


    1. Place potatoes in microwave-safe bowl; cover and cook HIGH for 8-10 minutes or until tender. Let stand cool for 10 minutes. Chop chives; cut cheese into 1/2 inch cubes.
    2. Preheat oven to 400’F. Slice 1/8-inch off side of potatoes and scoop about 1-2 tea spoons  of flesh from the inside,leaving a border and discarding the scooped-out potato. Place potatoes on baking sheet, then stuff with cheese. Drizzle with oil and sprinkle with salt; bake 5-8 minutes or until potatoes are tender and cheese is bubbly. Let stand 10 minutes to cool.
